Strawberries Ricotta Tart








I made this Strawberries Tart a weeks ago  with freeze strawberries and ricotta  and if you have  fresh strawberries would be nice too! But Im thinking in of all you are in Autumn/Fall so remember  sometimes you can use freeze berries, I have all the year I keep frozen berries of summer.


Anyway is a yummy Tart  for any time! You know I love berries all time!


Ingredients

Dough
2 tablespoon of butter
1 egg
1/2 cup of sugar
1 3/4 cups of flour
1/2 teaspoon of baking powder

Ricotta  cream

1 cup of ricotta cheese
1/2 cup of heavy cream
3/4 cup of  caster sugar
3 eggs

1 1/2 cups of strawberries freeze or fresh
sugar glass to  powder
Method

Preheat the oven at 180° (medium heat)
In a bowl place the butter, egg and sugar, beat until mix, and add the flour and baking powder.
Mix and kenad until you have  smooth dough.
Over a floured table place the dough and roll  a round shape and place in a round pan of 24/26 cm
Place in the oven by 15 minutes. Set aside.

 Ricotta Cream

In a bol place the ricotta, cream and caster sugar, add the eggs. Mix well.
Add the eggs and  mix.
Empty the ricotta cream over the tart and place at oven by 15 / 20 minutes until is firm.
Let chill.
Place the strawberries over the cream and powder with sugar glass.
Place in fridge by 1 hour before serve.

Tarta de frutillas con crema de ricotta






Hace algunas semanas hice esta tarta de frutillas (fresas),con crema de ricotta, para que sepan usé frutillas congeladas, les cuento porque en el hemisferio Norte, Europa, Usa, Canadá etc. estan en Otoño, pero esta tarta la pueden hacer con frutillas o frescas o congeladas, aquí todavía no tenemos frutillas seguramente el otro mes.Ya se me acabó mi provisión de berries del Verano (aunque congeladas se encuentran) así que debo esperar las nuevas.





 Ingredientes

Masa
2 cucharadas de mantequilla
1 huevo
1/2 taza de azúcar
1 taza 3/4 de harina
1/2 cucharadita polvos de hornear

Crema

1 taza de ricotta
1/2 de crema o nata
1 taza de azúcar glass (azúcar flor)
3 huevos

1 taza y 1/2 de frutillas(fresas)
Azúcar glass para espolvorear

Preparación

Precalentar el horno a 180° C.
Preparar la masa.
En un bowl mezclar la mantequilla, el huevo y azucar, unir bien, añadir los polvos de hornear.
Mezclar y amasar hasta formar una masa suave.
Pasar el rodillo estirando la masa hasta que tenga un tamaño para molde redondo  (24 - 26 cm)
Llevar a horno precalentado por unos 15 minutos. Reservar.

La crema

En un bowl mezclar la ricotta, crema,azúcar glass (azúcar flor) y los huevos de a uno mezclando bien.
Vaciar la crema de ricotta sobre la masa de tarta. Llevar a horno nuevamente por unos 15 a 20 minutos hasta que esté firme.
Retirar. Dejar enfriar un rato. Cubrir la crema con las fresas o frutillas y espolvorear con el azúcar flor (azúcar impalpable). LLevar a refrigerador por 1 hora antes de servir.

El me invitó hace unas semanas a hacer un post para su blog, y yo acepté un poco tímida pero feliz porque siempre es lindo compartir las recetas que uno hace con tanto cariños.

Panqueke crab rolls (Carlos Monge)










This recipe is   from a wonderful man and smart and creative Chef, Carlos Monge, a Chilean chef , died too young a few years ago, was only 46 years.


But he left a legacy of wonderful recipes.

Carlos made important contributions to Chilean cuisine, techniques and ingredients of the Orient and the rescue of native products.

The amazing of  Carlos Monge was a pioneer of fusion cuisine, when he was known, traveled widely in China, Japan, Thailand, throughout Asia. .

Reviewing some of his recipes amazes me to see that for example in giving panquekes in this recipe (stuffed with crab) the measures are accurate, never fails,  and always he make the dough..

These are  small panquekes do no more than 10 or 12  cm make  in a skillet.

Can also be frozen.

A recipe that can be used to enter or bottom plate or aperitif. .A recipe easy and absolutely  delicious.




Ingredients(6-8 servings)

Dough
4 tablespoons of flour
1/2 teaspoon of salt
4 eggs beaten
4 tablespoon of cold water


Stuffed
2 tablespoon of oil
1 egg beaten
1 green onion chopped
350 grs. crab meat in little pieces (fresh of frozen)
1 tablespoon of white wine
salt and pepper
1 tablespoon of corn flour dissolved in two tablespoon of cold water
1 tablespoon of flour mixed with a little cold water
oil for fry

1. Make dough

In a bowl mix the flour with salt; add the cold water (4 tablespoon) and the eggs, beat until you will have a smooth paste.
Moist with oil a little skillet, place 4 tablespoon of the mix
Place 4 tablespoons of dough by turning the pan to spread evenly, cook medium fire until the edges are lifted a bit and turn to cook the other side. Follow the same procedure until the mixture and reserve the pancakes.





Prepare the filling


In another medium saucepan heat oil, add the eggs, green onions and crabmeat, cook over medium heat a few minutes. Add wine, salt, pepper and cornstarch dissolved in water, stir until it thickens. Remove from heat and let cool.
Preparation stuffed pancakes

Take each pancake and put two tablespoons of filling, fold the four sides towards the center. In rolls the pancake tight and together with the flour mixture with water (to make them stick better.)
In a skillet heat oil and fry the little rolls until golden, set aside on kitchen paper towels.


Serve hot.
Serve alone or with green salads.

Panqueques rellenos con jaiba (cangrejo)

Esta receta es de un hombre maravilloso, creativo e inteligente , un Chef chileno maravilloso e intuitivo para la cocina, murió hace unos años, demasiado jóven, apenas tenía 46 años.
Pero dejó un legado de recetas maravillosas.
Fue un precursor de la cocina-fusión, viajó por todo el Oriente, China, Japón, Tailandia etc, de donde traía ideas maravillosas que aportaba a la cocina nacional chilena, en ese tiempo apenas se conocía la cocina fusión.
Me gusta porque sus recetas no son complicadas son exactas y utiliza elementos de aquí con otros de afuera.
De hecho esta masa para panqueques hecha por él mismo, yo sé que por tiempo muchas veces compramos las diversas masas pero a él ni se le ocurría.
Esta masa de panqueques se hace en un sartén pequeños porque esa es la idea unos rollos pequeños rellenos de carne de jaiba que puede ser congelada o fresca.
Los panqueque se pueden congelar, poniendo un film plástico entremedio.

Ingredientes
masa
4 cucharadas de harina
1/2 cucharadita de sal
4 cucharadas de agua
4 huevos batidos

Relleno

2 cucharadas de aceite
1 huevo batido
1 cebollín picado
350 grs. de carne de jaiba congelada o fresca (cangrejo)
1 cucharada de vino blanco
sal y pimienta
1 cucharada de harina de maiz disuelta en dos cucharadita de agua fría
1 cucharada de harina mezclada con una cucharada de agua fría
aceite para freir

Preparar la masa

En un bol mezclar la harina con la sal; agregar poco a poco cuatro cucharadas de agua fría y huevos; batir   hasta formar una masa suave.
Untar ligeramente un sartén pequeño con aceite, colocar cuatro cucharadas de la pasta girando el sartén para esarcir de modo uniforme; cocinar a fuego medio hasta que los bordes se levanten y  dar vuelta para cocer por el otro lado. Seguir el mismo procedimiento hasta terminar con la pasta y reservar los panqueques.

Preparar el relleno

En otro sartén calentar el aceite, agregar el huevo, cebollín verde y carne de jaiba, cocinar a fuego medio unos minutos. Añadir el vino, sal, pimienta y maicena disuelta en agua fría y cocinar revolviendo hasta espesar.
Retirar del fuego y dejar enfriar.
En cada panqueque o crepes poner dos cucharadas de relleno, doblar los cuatro costados hacia el centro.
Enrollar los panqueques bien apretados unir con la mezcla de harina y agua, esto hará que no se abran.
En un sartén calentar aceite y freir de a pocas unidades hasta que estén dorados, estilar en papel absorbente.
Servir calientes.
Se pueden comer solos o con ensaladas verdes.

Corn soup with Pebre, Clery dessert & Barquitas with dulce de leche

















This post is very special and so today I bring you three recipes.


The next  September 18 is the Patriotic Holydays , and our country will have  200 years.

Anyway  I make this holiday a special post, and for this I choose and rescued original old recipes to share with you other delights of Chilean cuisine.

The first recipe is a delicious Corn Soup with pebre and green chili, is a powerful and delicious soup (adapted from Paula Journal 2008).
I place a Pebre link about it history, here in Chile we use a lot Pebre and different recipes, all nice.
The following is a dessert based on a drink called  Clery, usually the Clery or Borgoña  is a drink white wine or red with  fruit, this is red wine but is made with jelly and berries , and is a delicious dessert. (Adapted from Plates & Cups magazine in 2009)

And finally an old colonial recipe you will love it because is with  Dulce de Leche (manjar) barquitas called (by the shape)is filling with dulce de leche and covered with meringue, yummy! (Adapted from Cuisine Magazine Paula 2009)

Corn Soup with Pebre


















Ingredients (5  servings)

4 cups corn kernels fresh or freeze
3 tablespoon of butter
2 green onions chopped
2 carrots peel and chopped
1 tomato
1/2 teaspoon of turmeric powder
500 ml milk
2 laurel leaves
3 basil leaves
salt and pepper

Pebre

2 tablespoon of cilantro
(chopped)
2 tomatoes chopped and peel
1  ají  verde (green chile) chopped
2 tablespoon of oil
salt
toasted or fry breads

Method

In a large pot cook the corns, add the butter, green onions,carrots, tomate and turmeric powder with 1 liter of water, cook by 8 to 10 minutes, add the milk and hierbs, simmer and reduce the heat, cook by 40 minutes aprox.
Remove from heat and set aside. Strain removing solids and set aside.

Heat the broth, add salt and pepper. Test the seasoning.
(The broth you can add some corn and chopped onion)
Make the pebre.
In a small bowl prepare all ingredients and mix well. Set aside.
To prepare toasted or fried bread I toasted thin slices of bread in a skillet.

Place the broth in soup bowls and on top of toasted or fried bread. place one tablespoon of pebre..
Serving at the table by placing the pebre if you want to add more to the soup.
Serve hot

Clery Dessert




Ingredients ( 6 servings)

1 cup red wine
1 tablespoon of sugar
1 envelope jelly berries
1/2 teaspoon of unsaborized jelly
1 cup cold water
1 cup hot water
1 cup raspberries
1 cup blueberries

Method

In a pot cook the red wine  slow heat until is reduced (20 minutes aprox)
set aside.

Dissolve the jellies in hot water, add the cold water, sugar,  wine and  berries.Mix well.
Distribute in wine glasses.
Refrigerate until is firm.
Serve alone or with whipped cream.

Barquitas with dulce de leche





Ingredients

4 yolks eggs
flour all is needed  for a smooth dough
1 teaspoon of margarine
1 cup of dulce de leche

merengue

3 whites
1 pinch of salt
250 grs. of sugar

Dough

In a bowl place the yolks, slowly add the flour until you have a smooth dough, add the magarine,

the dough must be smooth and elastic to cut the small boats
On a floured surface knead the dough smooth.
Roll de the dough  thin and cut into an oval shape (as a vegetable leaf) pierced with a fork.
Place in a baking sheet and cook the small boats put in oven at low temperature (170 °).
Remove, cool and fill with dulce de leche.Reserve.
Prepare the meringue
In a bowl beat the egg whites with sugar and pinch of salt, stir gently and place in a water bath over a  pot with water.
Beat the mixture until is more dry and you can see the bottom of the bowl and  look more thicken.
Remove from heat and beat until cool and firm.

Cover with meringue the barquitas  and place at oven until are golden and dry frosting.
About 10 to 15 minutes
Remove and let cool.

Caldillo de maiz con Pabre, Postre de Clery & barquitas con dulce de leche










El proximo 18 de Septiembre celebramos aquí en Chile otro Aniversario Patrio, cumplimos 200 años, en que comenzamos nuestra Indepedencia.
Por eso he hecho un post especial de 18 Septiembre en que incluyo tres recetas típicas pero originales.
(En años anteriores he posteado empanadas y alfajores)

La primera receta es un Caldillo de maiz con pebre que es absolutamente delicioso.

La segunda es un postre de berries que se llama Clery porque está basado en un trago que es de vino con frutillas o frutas, pero este es un postre.

Y por último algo con Dulce de Leche tan típico de aquí son unas barquitas rellenas con dulce de leche y merengue. Se las traigo con todo cariño para los chilenos y los que aman Chile, un abrazo, gloria

Caldillo de maiz con pebre

Ingredientes

4 tazas de choclo congelado o fresco
3 cucharadas de mantequilla
2 cebollines picados
2 zanahorias peladas y picadas
1 tomate
1/2 cucharadita de cúrcuma
500 ml de leche
2 hojas de laurel
3 hojas de albahaca
sal y pimienta

Pebre
2 cucharadas cilantro fino
2 tomates pelados sin semilla en cubos
1 ají verde sin semillas picado fino
2 cucharadas de aceite
sal
rebanadas de pan tostadas o fritas

Para preparar el caldo colocar en una olla, las tazas de maiz, agregar la mantequilla, cebollines,zanahorias,tomate y cúrcuma.
Agregar 1 litro de agua fría, leche y hierbas. Cocinar a fuego medio siempre revolviendo cocinar por unos 40 minutos aporximadamente.
Retirar del fuego y colar, eliminar los sólidos y reservar.
Sazonar con sal y pimienta.
Pebre
Unir todos los ingredientes del pebre y mezclar bien, sazonar con sal.
Servir las sopa en pocillos, tostar pan ya sea en tostadora o sartén colocar arriba de la sopa y encima una cucharada de pebre por persona.
Servir de inmediato.

Postre Clery con berries

1 taza de vino tinto o rojo
1 sobre de gelatina frutos rojos
1/2 cucharadita de jalea sin sabor
1 taza de agua caliente
1 taza de agua fría
1 cucharada de azúcar
1 taza de frambuesas
1 taza de arándanos

Cocinar en una olla pequeña el vino  a fuego medio hasta reducirlo a la mitad.
Retirar y reservar.
Disolver las gelatinas en el agua caliente, adicionar el agua fría la cucharada de azúcar y los berries, revolver bien.
Poner en vasos o copas y llevar a refrigerar hasta que la jalea se vea firme.

Barquitas de manjar con merengue

Masa
4 yemas de huevo
harina la necesaria para hacer una masa blanda buena para amasar
1 cucharadita de margarina
dulce de leche

Merengue

3 claras de agua
1 pizca de sal
250 grs. de azúcar

Preparar la masa
En un bol batir las yemas, agregar de a poco la harina hasta obtener una masa blanda.
Añadir hasta mezclar bien.
Sobre una superficie lisa con harina amasar y estirar con el rodillo.
Uslerear delgada y cortar con cuchillo haciendo formas de hojas (como una barquita)
Pinchar con un tenedor.
Colocar en una bandeja de horno con la temperatura media/baja (170°c).
Retirar del horno (deben estar ligeramente dorada)
Rellenar con dulce de leche o manjar.

Preparar el merengue


En un bol colocar las claras la pizca de sal y el azúcar, batir ligeramente y llevar a Baño María, batir sobre la olla con agua caliente hasta que el merengue se vea firme y se vea el fondo del bowl.
Retirar del fuego y batir hasta que se enfríe.
Con este betún cubrir las lanchitas y llevar a horno para que se seque  y  hasta que estén dorados.
Dejar enfriar y servir.

Gateau soufflé au citron (Lemon soufflé)








You remember my lemon Pie, I realy love Lemon desserts, are so light and delicious and this lovely recipe I adapted from Les Foodies  a french link , I love it recipes.
The best the recipes are easy, yummy and simple.I hope you enjoy this Lemon soufflé.


Ingredients (4 servings)

4 eggs
100 grs. caster sugar
50 grs melted. margarine
1 lemon (the juice and the grated peel)
3 tablespoon of flour
1 tablespoon of sugar glass
30 cl. milk
Method
Preheat the oven at 170° C.
Separate the yellows from the white eggs. In a medium bowl beat the yellow with 50 grs.  sugar until are bubble and white. Add the melted margarine and the lemon juice.
Add the flour and milk mixing well.
Whipp the whites until are firm and add the remained sugar.
Add this merengue slowly  to the batter.
Empty the batter in a greased soufflé mold  or similar.
Place in the oven about 15/20 minutes, the souflee will be golden .
let chill and powder with sugar glass.
Is nice with vanilla Ice cream and some berries

Soufleé de limón



Recuerdan mi Pie de Limón de la semana anterior? ahí les decía que me gustan mucho los postres con limón son deliciosos y refrescantes.
Encontré esta receta de souflée d elimón en Les Foodies es un portal de recetas francesas muy bueno lo pueden ver en el link.





Ingredientes (4 personas)

4 huevos
100 grs. azúcar impalpable
50 grs. de margarina derretida
1 limón (su jugo y la ralladura)
3 cucharadas de harina
1 cucharada de azúcar glass (azúcar flor)
30  cl de leche

Preparación
Precalentar el horno a 170° C
Separar los huevos, las yemas de las claras.
En un bowl colocar las yemas con 50 grs. de azúcar y batir bien hasta que estén espumosas y blancas.
Agregar la margarina derretida, el jugo y la ralladura de limón y la harina. Mezclar bien
Agregar progresivamente la leche.
Batir las claras a punto de nieve como para merengue.
mezclar con la preparación anterior, mezclar suavemente el merengue con el batido de yemas.
Vaciar la mezcla en un bol para soufflé enmantequillado.
Llevar a horno por unos 15 a 20 minutos hasta que este firme y dorado.
Espolvorear con azúcar glass y dejar enfriar.
Se puede servir con helado de vainilla y algunas berries.

Turkey polenta cobbler









I find and adapted  this yummy recipe from Country living, September 2008 and I this is yummy and original and is perfect to freeze or heat in microwaves, the biscuits have polenta and are really tasty. 
Like other recipes I think is perfect for every time, and specially for North hemisphere that will in Autumn soon. And here will be spring in September 21 th.

Ingredients

1 2/3 cups  flour
1 cup of polenta medium ground
2 teaspoon of sugar (optative)
1 3/4 teaspoon baking powder
2 teaspoon of salt
3/4  cup of double cream
6 tablespoon of butter
1 cup fresh or freeze corn kernels
1/2 cup slices green onions
2 cups green beans cut in piece
2 tablespoon corn oil
1 green bell pepper
chopped
1 red bells peer chopped
1 cup whole milk
1 1/2 cups low  sodium chicken broth
700 grs. turkey breast  grinded or cut in pieces




Method (8 servings)

Preheat the oven at 200°c.
Line a baking sheet with a parchment.
Whisk 1 1/3 cups flour, polenta,sugar, baking powder and 1/2 teaspoon salt
together in a large bowl.
Cut 4 tablespoon of butter into small pieces  and blen into dry ingredients with a pastry blender
until mixture resembles a coarse meal.
Gently stir the heavy cream  un til just combined.(if is neede add some water)
Drop 1/4 cupful batter 2 inches apart onto the prepared baking sheet.
Brush the tops with 1 tablespoon melted butter and bake until pale blond about 12 minutes.
Set aside.
Reduce oven temperature to 180° C .
Heat a large saucepan to medium heat. Add the grind turkey, corn oil.  and add the grean beans, green onions and corn and peppers until the vegetables are tender and is cook..
In a medium skillet over medium heat melt 2 tablespoon of butter- Add the remaining 1/3 cup flour and cook, while stirring for 1 minute.
Whisk in broth, milk and 1 1/2 teaspoon of salt.
Bring to a simmer while whisking and cook until smooth and thickned. Pour mixture over the vetables and turkey and stir to combine.
Pour filling in a casserole dish and top with reserved biscuits. Bake until bubbly and biscuits are golden brown, about 30 to 35 minutes.


EN ESPAÑOL
Pastel de pavo molido y polenta








Ingredientes ( 8 porciones)


1 1/3 tazas de harina
1 taza de polenta
2 cucharadita de azúcar (opativo)
1 3/4 cucharadita de polvos de hornear
2 cucharaditas de sal
3/4 taza de crema o nata espesa
6 cucharadas de mantequilla
1 taza de maiz o choclo congelado o en tarro
1/2 taza de cebollín verde picado
2 tazas de arvejitas congeladas
2 cucharadas de aceite de maiz o de oliva
1 pimiento verde picado
1 pimiento rojo picado
1 taza de leche
1 y 1/2  tazas de caldo de pollo bajo en sodio
700 grs de pavo molido o en tiras

Preparación

Prec alentar el horno a 200°C.
Forrar una bandeja de de horno con papel mantequilla.
Mezclar  1 1/3 taza de harina, polenta, azucar, polvos de hornear y 1/2 cucharadita de sal todo junto en un bowl grande.
Agregar 4 cucharadas de mantequilla a los ingredientes secos y mezclar bien, agregar la crema hasta unir bien, (si esta seco agregar un poco de agua)hasta tener una masa migosa no muy húmeda.
Sobre la bandeja del horno ponga la mezcla por cucharadas (como para hacer los pancitos) un poco separados para que no se peguen.
Con una brocha pintar con mantequilla derretida los pancitos. Llevar a horno por 12 minutoshasta que estén ligeramente dorados.Reservar.
Reducir la temperatura del horno a 180°C.
Calentar en un sartén 2 cucharadas de aceite a fuego medio. agregar el  pavo molido o en trozos, maiz o choclo, arvejas, pimientos rojo y verde hasta que los vegetales esten tiernos y el pavo cocido.
Aparte en un sartén calentar 2 cucharadas de mantequilla, agregar 1/3 taza de harina, cocinar por un minuto. Agregar el caldo de pollo, la leche y 1 1/2 cucharaditas de sal.
Cocinar siempre revolviendo, hasta que el guiso esté cremoso y esposo.
Cuando esté listo vaciar la mezcla en una cacerola o fuente,y repartir sobre el guiso los pancitos, llevar a horno, cocinar hasta que esté burbujeante y dorado, alrededor de 30 a 35 minutos.

Lemon Pie whith raspberries sauce





What is better than Lemon Merengue Pie?? A lemon Pie with raspberries sauce I think!
When I saw this recipe I fall in love literally, Lemon Pie ( and really all desserts with lemon) is my favorite pie and here all we love it. Finally I made it and was really nice.
Fortunately I took photos when the Pie was still hot (so the pieces are a bit disarmed ) but would have been futile to expect the next day, at night the plate was empty...

This recipe is adapted from Recetas Líder , Mayo 2010

 Ingredients

Crust Pie

2 cups of lemon cookies grinded
4 tablespoons of melted butter

Filling

200 grs. frozen raspberries
100 grs. sugar
1 tin of condensed milk
2 lemon (juice and peel grated)
3 yolks eggs

Merengue

3 whites eggs
200 grs. caster sugar
pinch of salt










Method

Crust pie



Grind cookies in a processor and place in a bowl together  with melted butter.Mix well.Like a dough
Place cookie dough in a buttered pie shell (approx. 24 cm)
Refrigerate while preparing filling.

Raspberry filling
In a saucepan  place the  raspberries.and 100 grs.  sugar and 1 / 4 cup water and  mix with a 1 tablespoon of cornstarch. Mix with a woodenspoon.
Cook over low heat until sugar dissolves and has a thick consistency.

Lemon cream filling
In a bowl mix condensed milk with lemon juice and lemon zest, add the yolks and mix well.

Remove.

Tarta de limón con salsa de frambuesa
(Pie de limón con frambuesa)


Qué  es mejor que un Pie de Limón ?? un Pie de limón con salsa de frambuesa. Cuando vi esta receta me encantó  y por supuesto que se me había perdido (tengo muchas) llegué al nivel  que no   sabía si la había leído en inglés o en español, rianse no más, me pasa a menudo, leo mucho en los dos idiomas a veces marco y  guardo una receta pero tengo tantas pendientes...
Bueno la receta fue un exito e incluso le pensaba sacar otra foto al otro día, pero no pude, se lo terminaron en la noche.


Esta receta está adaptada deLibro  Recetas Líder, Mayo 2010.

Ingredientes

2 tazas de galletas de limón molidas
4 cucharadas de mantequilla derretida

Relleno
200 grs. de frambuesas congeladas
100 grs. de azúcar
1 tarro de leche condensada
2 limones su jugo y la ralladura de los limones
3 yemas

Merengue
3 claras de huevo
200 grs. de azúcar glass (en polvo)
1 pizca de sal

Preparación de la masa

Colocar las galletas molidas en un bol y agregar la mantequilla derretida.
Mezclar bien y forrar un molde para tarta (24 cm) Refrigerar mientras se prepara el relleno.

Relleno de frambuesa
Colocar en una olla 100 grs, de azúcar y las fambruesas, 1/2 taza de agua y 1 cucharada de maicena. Cocinar a fuego lento hasta que el azúcar se disuelva, debe quedar una mezcla espesa.

Relleno de limón

En un bol colocar el tarro de leche condensada, agregar el jugo y ralladura de limón, mezclar bien, agregar las yemas de huevo, mezclar.

Merengue

Batir las claras con una pizaca de sal, batir firme,  poco a poco agregar el azúcar. Hasta obtener un merengue firme y brillante.

Retirar del refrigerador la masa de galletas cubra con la crema de limón y lleve a horno por unos 6 a 7 minutos (170°c)

Retirar y  esparcir sobre la crema de limón la mezcla de frambuesas. esperar un poco y esparcir encima el merengue

Cocinar en el horno  por unos 5 a 6 minutos horno medio/bajo hasta dorar ligeramente.

Dejar reposar. Servir. Se guarda en el refrigerador.
